Recipe: Wildfire ‘Dirty’ Steaks

Who doesn’t love a mouthwatering, tender, juicy, fall apart steak… the sizzle as it cooks…. the smell of the bbq as you wait for your dinner… the thrill of cooking over charcoal… and it doesn’t get much closer to the charcoal than this, the Wildfire ‘Dirty’ Steak.

Cooking ‘Dirty’ style involves placing your food directly onto the coals and in this video, we look at how to cook your steak ‘Dirty’ style.

The ingredients couldn’t get much simpler:
-The steaks of your choice
-SPG (home mixed seasoning of sea salt, crushed black pepper and garlic granules
-olive oil
Lightly oil the steaks, cook as shown and season with SPG once turned. Slice and serve.

For the dressing:
– 1 tbsp dijon mustard
– 2 tbsp mayonnaise
Season to taste with sea salt and crushed black pepper and mix together

Plus your choice of sides, in this case we are enjoying some good old cajun fries and buttered garden peas with squeeze of fresh lemon juice.
